Carrot soup  

Soup for lunch is a clear and simple favorite in the wellness kitchen. Here we mix together a lovely soup with carrots, potatoes and coconut milk. 

4 servings 

ingredients

1 onion

1 clove of garlic 

4 potatoes 

3 carrots

400g coconut milk

1 vegetable broth

2 tbsp olive oil

1 tsp cumin

2 tsp paprika powder

7 1/2 dl water

How to do this

Peel carrots and potatoes.

Cut into fine pieces.

Finely chop the onion and garlic into small pieces. 

Fry the vegetables and onions in a saucepan.

Add water, coconut milk and vegetable broth. 

Bring to the boil and simmer for 15 minutes. 

Mix the soup smoothly with a hand blender or in a food processor.

Served with hot bread, salad and possibly a dollop of yogurt cream with parsley.

Halloumi burger

To those of you who love halloumi burgers, I can only say as follows – you will love your own halloumi burgers in the future! A more luxurious lunch at home in your wellness kitchen.

4 servings 

ingredients

2 halloumi cheese

100g Philadelphia cheese

1/2 lime (grated shell and squeezed juice)

1/2 pot mint

1/2 red onion

1 pot salad

10 - 15 cherry tomatoes

1 avocado

4 hamurger bread

Coleslaw

150g white cabbage

100g carrots

100g Philadelphia (cheese)

1 tbsp mayonnaise

1 tsp whole cumin 

How to do this

Coleslaw

Grate the cabbage and carrot finely. Mix with Philadelphia and mayonnaise. 

Season with cumin, salt and pepper.

Halloumi burger

Slice the halloumin and fry together with a little oil or put on the grill. 

Season Philadelphia with grated peel and lime juice. Season with salt and mix in the chopped mint.

Slice the onions, tomatoes and avocado.

Assemble the burger with bread, salad, halloumi, dressing and vegetables. Serve with coleslaw and french fries or a simpler version with Swedish potato chips.

Good morning muffins with blueberries

Blueberry muffins for breakfast


A tastier breakfast is guaranteed with these easy-to-cook muffins with blueberries and banana. The wellness kitchen at its best: easy to cook, tasty, healthy and affordable.

6 large or 12 regular muffins (choose the shape that suits the taste)

ingredients

1.5 dl wheat flour

1 tsp vanilla sugar

0.5 tsp bicarbonate of bicarbonate

1 tsp baking powder

1.25 dl sugar

1 banana

0.5 dl yoghurt

1 egg 

3 tbsp rapeseed oil

A handful of small or large blueberries

How to do this

Preheat the oven to 175 degrees.

In a bowl, mix the wheat flour, vanilla sugar, bicarbonate, baking powder and sugar.

Mash the banana and mix the yogurt, oil and eggs in another bowl.

Add the flour mixture a little at a time. mix.

Turn down the blueberries (carefully).

Divide the batter into muffin tins.

Bake 20 - 25 minutes in the middle of the oven.
